I'm not German, but I know what langostinos are. They're small langostos.

There is no 'national' dish of Germany.



We have 16 local states here and everyone has it's own kitchen.



Basically you can say that the north is more oriented on fish and mulligans, while the south is more into 'Braten', 'Klöße' and 'Schnitzel' :) )



Common dishes like 'Sauerkraut' and 'Kohl' can be found everywhere, but the combinations and taste are very different from one state to the other.



The southern state of Baden-Württemberg is well known for it's noodle specialities like 'Spätzle mit Linsen' :) )

Langostinos à la Sylt :)









"Labskaus" is a northern German traditional dish known since the early 17th. century (some sort of Minestrone/Mulligan).



Here's the original recipe :)



Labskaus, die Hamburger Spezialität,

ein deftigen und gesunden Eintopf trotz seiner abschreckenden Optik.



Das traditionelle Seefahrergericht entstand es in den Zeiten der großen Segelschiffe.



Man nehme:

500 g Kartoffeln, gestampft, es kann aber auch Kartoffelmus sein.



Ca. 300 g Pökelfleisch (es kann natürlich auch Corned Beef sein oder Rindfeisch aus der Dose).



Zwiebeln, eine große sollte es schon sein.



Ca. 100 g eingelegte Rote Beete.



Ca. 100 g durchwachsenen Speck (sei nicht so geizig).



Salz und Pfeffer darf natürlich nicht fehlen.



Ein paar Eier, die kommen dann als Spiegelei oben drauf.

Rollmops, für jeden sollte schon einer dabei sein

Gewürzgurken



Die Kartoffeln kochen und mit etwas Kochwasser zu Brei stampfen (Kartoffelmus).



Den durchwachsenen Speck und die Zwiebel(n) feingewürfelt glasig dünsten.



Den Corned Beef (oder das Fleisch) hinzugeben und das ganze anbraten.



Die Corned Beef-Masse und den Kartoffelbrei mit kleingeschnittener Rote Beete unterrühren und das ganze würzen.



Dann mit Rollmops, Spiegelei und Gewürzgurke servieren.

Das Bier und den Köm nicht vergessen :-)

"Handkäs' mit Musik" (roughly translated "Hand Cheese with Music" :D ) is a typical speciality from Frankfurt.



The "music" refers to the dominant spicy taste and the mandatory Applewine :)
